1. Yummy Carrot Cake Recipe
The ingredients that you require to make this cake include three medium size carrots (140 g), 3 eggs beaten, 175ml sunflower oil, 175g muscovado sugar, raisins (100g), 175g flour, grated zest of 1 orange, 1tsp ground cinnamon and ½ tsp freshly grated nutmeg. For the frosting, you need 175g icing sugar and 1 – 2 tsp orange juice.
Preheat the oven to 180C and oil and line the base and sides of the cake tin using baking parchment. Take a large mixing bowl and add oil, eggs, carrot, raisins and grated orange to it. Mix carefully and then add flour, soda and spices. Mix all the ingredients properly.

Preheat the oven to 350 degrees F and grease the cake tin. Using a large mixing bowl slowly put all the ingredients together and start mixing them carefully. Ensure that the mixture is evenly mixed. Pour the mixture to the greased cake tin and bake for 40 – 45 minutes. Touch the middle of the cake to see if it is firm. Remove it for icing and serve after it cools.
3. Simple Carrot Cake Recipe
The ingredients required are three cups finely grated carrot, 4 eggs, 2 cups sugar, 2 cups pastry flour, 2 tsp baking soda, 1tsp salt, 2 tsp ground cinnamon, 1 ½ vegetable oil and for the icing 1tsp vanilla extract and cream cheese.
Preheat the oven to 300 degrees F. In a mixing bowl, mix all the ingredients together so that they blend well. Put the mixture in a greased cake tin and let it bake for 40 minutes. Remove when it is cold and serve.
